A Pancake Breakfast

Pancake breakfasts are THE best things in the world. Maple syrup, ice cream and fluffy pancakes are heaven-sent when you need a pick me up on a sunny Sunday morning.

However, this recipe is slightly different, because it is slightly (a lot!) healthier. But I promise you will like it just as much!

These pancakes are super simple - there are only two main ingredients and you're all set. They literally take 5 mins to make once you're rolling.

Before we start though, I have to confess that I am the WORST at flipping any type of pancake. I can mix the ingredients and pour the pancakes onto the pan in a relatively satisfactory manner, but flip - no thanks. I leave that serious responsibility to the person who is sharing them with me. I'm sure I'll get better one day...

What you will need:

2-3 medium bananas

3 eggs

olive oil

toppings!














How to:

  • peel the bananas and mash them


  • add the eggs

  • mix until relatively smooth


if you want to achieve this in 3 seconds, put the bananas and eggs into a 'magic bullet' type blender!

  • heat a pan and coat lightly with olive oil

  • spoon/pour (whichever is easiest) the mixture onto the pan


  • check the underside and flip when golden


  • continue with all of the mixture


DONE!

I just adore how golden these pancakes turn out. They are nutritious and filling and MY ABSOLUTE FAVOURITE!

I love to add a spoon of either sour cream or yoghurt on the side as well. I'm so hungry I would LOVE some right now.
